In my master thesis, I have worked with liposome systems, which are spherical vesicles, made from phospholipids through high-pressure homogenization. I have used NMR relaxometry mostly T2 relaxation data to characterize the liposome systems and asses their stability. In my PhD I will be working on the use of NMR relaxometry and MR imaging for characterising confectionery systems particularly sugar crystallization and moisture distribution.
