European Network on NMR Relaxometry

My PhD study is about encapsulation of olive leaf extract by means of microfluidization and double emulsion methods. Olive leaf extract has high phenolic content and phenolics are easily degradable. My aim is to enhance the shelf life and stability of olive leaf extract. I am using NMR relaxometry mostly T2 relaxation data to characterize the emulsion systems and to understand the phenolic release to outer phase. In my further studies, I am planning to calculate the diffusion rate of the gastric and intestinal juices into the capsules by using NMR relaxometry data.
